The region is also home to the famous brandy made with Olivet pears, a delicious nectar with a subtle flavour that will warm you all the way from your throat to the tips of your ears !
To make this wonderful drink, a complicated, two-stage manufacturing process is required.
Firstly, we distil this year's harvest selection of the finest orchard Williams pears. We then bottle the resulting liqueurs in Spring, when they are still developing.
Once all mixed together, a quality beverage is guaranteed, renowned for the merry-making that it causes...
Ingredients (serves 6) :
- 3 eggs yolks
- 10 egg whites
- 1 egg
- 200g sugar
- 75g flour
- 50cl milk
- 5cl Poire d'Olivet brandy
- icing sugar
The Recipe :
Mix the eggs white, the egg and 100g sugar. Beat the mixture until white.
Add the flour, then pour in the boiling milk.
Cook for about 6 minutes on a medium heat, whilst continuously stirring the mixture.
Remove from the heat and add the pear brandy. Whisk the mixture until smooth and until it has cooled down.
In another bowl, beat the ten egg whites. Add 100g of sugar.
Add this new mixture to the first.
Bake in the oven at 190°C, in individual dishes (greased and sugared), for about 10 minutes.
Sprinkle with icing sugar before serving.
