WITH GOAT'S CHEESE AND POPPY SEEDS
Preparation time : 15 minutes
Time in the refrigerator : 10 minutes
Ingredients (serves 4) :
- 4 medium-sized tomatoes
- 100 g fresh goat's cheese
- ½ onion, finely-chopped
- 1 shallot, finely-chopped
- salt, pepper
- mixed salad
- 1 pinch of finely-chopped chives
- 1 tea-spoon of chopped garlic
- 1 pinch of finely-chopped parsley
- poppy seeds
- walnut oil vinaigrette

White wines from Orléans or Gien
The Recipe :
Blanch the tomatoes in hot water (Boil some water and place the tomatoes in the water for 10 seconds. Cool them down in some cold water for 2 minutes and carefully remove the skins).
Cut the base of the tomatoes, so it stays standing. Cut the top of the tomatoes to make a ‘lid'.
Hollow out the tomatoes and place the contents to one side.
Thoroughly mix the fresh goat's cheese, onion, shallot, chives, parsley and the garlic; add a dash of cream.
Gently fill the tomatoes with this mixture, put the ‘lids' back on and place in the fridge.
To serve, place the tomatoes on a small bed of mixed salad, decorated with chervil, a straw of chives and poppy seeds, then add the walnut oil vinaigrette.
